I think it is very important to actually understand each product so that you are able to use it for various kinds of cooking. I also think it is very important to learn by doing, so in my classes we will definitely get some practical hands on sessions on how to cook.
I have worked as a chef for 6 years. I started out purely with my own interest, from there I started selling my cakes. Then I moved on to work in a Japanese kitchen and was taught the art of making sushi by a japanese chef, later on I worked in several more restaurants that focused on traditional cooking techniques and styles
